Tollens's test is used to detect the aldehyde and alpha-hydroxy ketone functional groups in the compound.

Glucose being a aldose reducing sugar gives a positive tollen's test producing silver mirror.

Sucrose is a non reducing diasachharide made up of glucose and fructose. It also gives a positive tollen's test producing a beautiful silver mirror.

This is because the aqueous acid added before the test hydrolyzes the disaccharide into glucose and fructose which are reducing sugars and guve positive tollen's test.
