In general, we talk about these assumptions when working with enzymes

- Tempearture --> will change the kinetics and even the folidings of the nezyme

- pH level (i.e. concentraiton of H+) --> typically affects the development of certain binding sites

- Concentration of active sites --> the most free, the faster reactions

Specifically talking aboud LDH:

- Tertiary vs. Quaternary structures ---> will favour active site bindings

- differences between subunits will make LDH --> Alanine vs. glutamine
