Vanillyl alcohol is derived from vanillin. It is used to flavor food.

Vanilly alcohol is an organic compound having an -OCH3 group in addition to -OH groups so it dissolves in ether.

It is insoluble in cold water.

Vanillyl alcohol is soluble in excess NaOH because of its phenolic OH ,and form water-soluble ionic sodium salts: ArOH + NaOH → ArONa + H2O.

Vanillyl alcohol is insoluble in aqueous HCl ( during the synthesis of vanillyl alcohol from vanillin the product vanillyl alcohol is precipitating out while cooling the reaction mixture containing HCl). It is crystalline white to off-white powder
