Because difference in the age and sex can results variation in various in different metabolism,hormonal regulation,and other various physiological parameters including the various brain functions.

For example,if we are performing a experiment on a behaviour with human subjects.Then we must consider the paramets like-

Age of the subjects, as the diffrence in the age is a major factor for various hormonal and neurological function which can make variation in the result.

Sex is another important parameter as different sex produce different function in the hormone as well as some other physiological parametes.

So in case of same species differece in age and sex is also as important as variation between two species.
