Fermentation is the method of converting a composite organic substance into a simpler substance by means of the action of bacteria or yeast. By the fermentation of sugar alcohol is produced with the release of carbon dioxide as well as very little energy.

(b) The dough which used for production of idli and dosa gives a puffed look which is for the reason that of the action of bacteria which releases carbon dioxide. This CO2 freed from the dough then gets trapped in the dough, thus giving it a puffed look.
