One of the enzymes is trypsin-
Trypsin cleaves the protein at the proteins at the C-terminal of arginine and lysine residues. Peptides which are formed by the trypsin digestion are called as tryptone. Trypsin enzyme is produced by the pancreas.
The other enzyme which is used is pepsin. Pepsin cleaves the proteins between the hydrophobic and aromatic amino acid. Pepsin is produced by the stomach.
