Potato contains many enzymes. The enzymes mainly found in potato are amylase, glyoxalase, phosphorylase, tyrosinase, peroxidase, catalase, aldehydrase, phosphatase, sistoamylase, and zymohexase. Peroxidase removes destructive peroxides that are a product of normal metabolism in potato. Peroxidase and catalase both are present in potato, which has same mechanism of action, however, peroxidase catalyzes oxidation of a wide variety of organic and inorganic substrates in presence of hydrogen peroxidase to form activated oxygen donor.

Thus, it is possible to use potato enzyme extract for peroxidase.
