When an enzyme is denatured the function and structure both are lost because the function of enzyme is dependent on its structure and when the structure is lost, function is lost too.

Two factors that influence the protein structure are pH and temperature.

pH is very critical because from the pH the side group and carboxylic and amino groups will be protonated or deprotonated and that will determine how the hydrogen bond will be formed.

Temperature is very critical for folding of protein and at higher temperature weak bonds are broken. So, the folding of protein is very critical for the structure and function.of protein.
