Some experiments form lumps in the starch paste during the process. This is because while preparing starch paste if the starch is added to the boiling bwater as a.dry paste it form lumps. In this condition it does not gelatinise properly.
Therefore the dry starch should be first mixed with cold water to form a thin cream, and then the mixture should be run slowly into the boiling water with constant steering to avoid formation of starch lumps.
