endospores are a type of structure which is formed by certain types of bacteria in adverse conditions. endospores are a dormant, nonproductive and heat resistant structure which is able to survive in a high degree of heat for hours. this is the reason that even after old-time cooking food and proper packing will cause the smell and deterioration of food products which leads to believe scientists that the bacteria evolve spontaneously. because they have no knowledge of endospores present in the already cooked food.
