Explain what does amphiphilic mean and how it relates to proteins and gums.
Amphiphilic compounds are chemicals which have hydrophilic as well as lipophilic properties. They have water loving polar end as well as fat loving end. Common Amphiphilic substances are soaps, detergents and some proteins.
The lipophilic end will have hydrocarbon while the hydrophilic polar end is either Ionic or uncharged functional group.
Alpha-beta protein structural analysis show that beta strands possess Amphiphilic characters.
Synthetic and natural polymers also show this property.
