The reason behind is at high temperature at which food are prepared usually pathogens can't survive. however, hospital patient do act like reservoir of pathogens because they tend to have various other underlying health conditions.

Hospital procedures often involve blood vessel perfusions via needle or other shrpen objects which gives direct access to blood and other bodily fluids, this means greater risk of infections.

surgical procedure do expose internal organs to contamination risks as well, its a known fact.
