Gastric juice present in the stomach causes acid hydrolysis of the starch. There are no enzymes available for the breakdown of the starch in the stomach. Hence during the starch break down, HCl of the gastric juice is used in the acid hydrolysis and hence pH of the gastric juice will increase. However, protein breakdown is governed by the enzymes present in the gastric juice. Therefore the pH of the gastric juice is not affected during the breakdown of proteins.
