Meat is composed of various types of muscles and water and other components. If we left over night the due to the evaporation the meat tissue loose it's moisture. Drying process faster the distance to the middle part of the meat piece to its surface. Continuous evaporation leads to the weight lose and also cause changed of its shape through shrinkage. Wrinkled and the colour change into dark colour. Texture also changed to hard.  

Not only this the bacteria grow on this condition and spoil the meat and make it harm.
