For enjoyment of food mainly coming to liquids aroma is most important. Because the liquids are available in multiple dosages. Without the aroma it is reluctant to take and when we are taking the liquids the complete mouth will get feel its taste, and aroma too. If it is not good nausea will occurs.
While coming to solids most of the dosages are available in single form. Though they are bitter and they will give unpleasant smell we can take because it will disintegrate at GIT. So there is o disadvantage with the aroma.
And in liquid type of food only we will take care of organoleptic properties more while compare to the solid type of foods.
