Tubers are structures in certain species of pants, that become enlarged to store nutrients.
Potatoes are nothing but stem tubers i.e. their stem gets enlarged to fill it with starch stored in enlarged parenchyma like cells. The tuber is also used for proliferation and propagation during growing season. Tubers can tolerate winters and survive even during fall when all the other above ground plant parts die. During spring tubers regenerate new shoots that use the stored food in the tuber to grow. These are the two major functions of a Potato Tuber
