amylase speeds up the breakdown of starch into short carbohydrate chains as follows:amylase is an enzyme which is present in saliva. In digestion the   enyme amyalse has an important role.Its substrate is starch.that the substarte starch is binds with the active site of amylase enzyme.that is the binding of amymase(enzyme) and starch (substrate) is induced fit.induced fit means the enzymes active site undergoes a change in its conformation to allow a better fit between the active site and the substrate.this means that the enzyme is highly specific for the reaction that they catalyse.

when enzyme amylase catalyses breakdown of starch then it lowers the activation energy and speed up the reaction.and convert starch into the product maltose.maltose is disaccharide which is made up of two glucose units joined together.

the product is maltose.
