Alcoholic fermentation also called ethanol fermentation is a biological process in which sugars are converted into cellular energy producing ethanol and carbon dioxide as by products.

Yeast,​​​​​​​​​​​​​ are the major alcoholic fermenters and are the organism used to demonstrate alcoholic fermentation. Yeast are eukaryotic, single celled microorganisms classified as members of Kingdom Fungi. Yeast convert carbohydrates into ethanol and carbon dioxide under anaerobic conditions.

S​​​​​​​​​​accharomyces cerevisiae is a species of yeast involved in wine making, baking and brewing.
