When the lid for a vat of wine is kept open,wine comes in contact with oxygen.The yeast continues to ferment for some time.The alcohol in wine comes in contact with oxygen and gets oxidised.Alcohol gets oxidized to acetic acid.Microorganisms from outside environment also spoils the wine.If fermentation has completed,yeast will not perform alcoholic fermentation all of a sudden.If the lid is opened only evaporation and oxidation takes place.Oxidation of alcohol destroys the freshness,flavor and aroma fade out.
