Fermentation is a well known metabolic process in which an organism converts carbohydrates mainly sugar, starch etc. into an acid or alcohol.

Yeast obtains the energy by converting carbohydrates into alcohol or acids.

When sugar is fermented by yeast, it produces gas as a waste product (ex-carbon dioxide).

Application: Alcohol in beer results from the sugar fermentation by yeast. In this, glucose is left with yeast and that results in production of alcohol in beer.
