The potatoes with higher sugar concentration have a high ability to draw water from the hypotonic surrounding, where else those with low sugar concentration have less capability of drawing water from hypotonic solution due to small diffusion gradient between their inside environment and the outside environment . Overall potatoes with higher natural sugar concentration, water will diffuse into it and they will gain weight. In potatoes with low sugar concentration, water will diffuse outside the potato and they will lose weight. water potential is a measure of how freely molecules of water can move in a particular system or environment .
