Answer: Rennin is also known as chymosin which produced by some animals to digest the crude and coagulted milk, i.e., cow, human. Microbial production of the rennin also come in light which enhanced it use in milk industries. Many fungal and bacterial species have been reported to produce rennin as their primary metabolite. But limited number of microbes, low production, feedback inhibition are few problems researcher faced. Genetic engineering of of fast growing and harmless organism by inserting rennin producing genes via recombinant DNA technology which resulted in increase in rennin production. Biotechnology can also improve stability ,seperation and purification of rennin by inhibiting production of undesired products.
