Chitin are polymer , derivative of glucose, chain is fromed by N-acetylglucosamin.

Cellulose are also glucose derivative like chitin , the chain is formed by D-glucose.

Enzymes is generally monomer that refers to single molecule but enzymes are composed of primarily of proteins, that are polymers of amino acids.

Cholesterol are not true polymers, they are partly lipid and partly protein that is lipoprotein. Lipid molecules can't dissolve in water, their bonds form a ring , they don't form chain but diffused with carbon.
