methionine is remvoed from the later stage of processing because it is not universal that an protein will begin with the AUG, ie not every protein will begin with AUG and also it is not feasible that the protein will always begin with AUG, therefore, to maintain the versatility and universality of proteins it is removed in the later stage of protein processing.
