Bile salts are required for emulsification of fat for making them water soluble and its absorption by intestine. Bile salts are secretion stored in the gall bladder and it is secreted by Liver.Its release from the gall bladder is stimulated by the hormone Cholecystokinin.Function of Cholecystokinin in Contraction of gall bladder and common bile duct.Cholecystokinin is released by the I cells (enteroendocrine cells) of duodenum .When a fat ,aminoacid rich diet enter duodenum , it is sensed by the I cells and secretion of CCK takes place which stimulate release of Bile Salt and Juice.Vegetables are not fat rich food,Fried chicken and french fries are the highly fat rich diet .and stimulate the Secretion of Bile salt.
