Breaking of emulsion means separation of the two components of the emulsion; fat/oil and water.

If an emulsion breaks ; then the method to fix it depends on the nature of the sauce.

If it is mayonnaise; a fresh egg yolk should be beaten with the lemon juice into the bowl and the broken emulsion should be slowly whisked in it.

If it is vinaigrette; then the vinaigrette should be whisked in the bowl or vigorously shaken in a closed jar and poured immediately over food while it is still in motion.
