I live in the United States and I work for a company in China. However, Hong Kong is the country that sends me money every month. What taxes do I need to pay? Do I pay taxes to all of these three countries? Why or why not?

The taxes that you are need to pay are federal income tax on such wages or salaries which includes overtime,bonus or any other supplement wages,Medicare taxes and social security taxes and other compensation taxes if any after availing deductions.

No you need to pay tax only for USA.

The place of employment will be your place of taxation for an employee regardless the country to which the organization belongs to or country which paid salary as taxes are collected by the government to achieve their government activity and as an responsible citizen you need to pay tax where you got employed because it is the responsibility of that citizen.
