Let's say Column A is "Fruit" and Column B is "Price". Let's say that Apples are always $1 and Oranges are always $2. How do I make it so that when I type "Apple" in column A, $1 automatically populates in column B; and when I type "Orange" in column A, $2 automatically populates in column B?

Select the column you wish to modify. Right-click that selected area and choose Format Cells... Then go to the Alignment tab and set the Text Control to "Wrap text". Now click the OK button.
While the column is selected, adjust the column width to what you need it to be.
If you wish to make the text's font size adjust automatically when the column reduces, then do the same as above for Formatting, but set the "Shrink to fit" option.

Usually the first row/s are used for label headings of those columns they are above.
And the first column is used in the same manner for rows, to contain unique labels for all of the values within that row/s.

Have a column of data that I need to delete the last three characters in each cell - ex. change 401-GE.P1 to 401-GE; 402-101-02.P1 to 402-101-02, etc.
Can find and replace be used?

Headings are nothing more than Labels for column and/or row data. Usually the first column (A) is used for row headers, and the first row (1) is used for column headings.
And in the OPTIONS under the Calculation tab, if the "Accept labels in formulas" checkbox has been selected, then the header names may be used without any special Naming.
